Funfetti Cupcakes

Morning friends!

Today starts a short week which is always a plus. Yesterday was spent lounging around (again), a nice workout, an attempt to shop for more work clothes at the mall (major fail) and a long walk with Murphy on a trail near our apartment. Pretty much a perfect day if you ask me.

Now I mentioned in my last post some cupcakes that I made for our friends visiting (since um, if I made them for just me and Ryan, well I would eat half of them and that really doesn’t go well with my “trying to look good for our wedding day” goal.


I promised photos and a recipe, so here ya go!

Recipe from How Sweet It Is

Homemade Funfetti Cupcakes (makes 12 cupcakes)

1 cup sugar

1/2 cup butter

tablespoon vanilla extract

1 1/2 cups flour

2 whole eggs

teaspoon baking powder

1/3 cup milk

1/3 cup assorted brightly colored sprinkles (don’t forget to put them on top of the cupcakes!)

Get all the ingredients together & preheat your oven to 350.

Cream butter & sugar together, then add the eggs

Next up, combine the dry ingredients and add half to the creamed mixture. Then pour in the milk and the rest of the dry ingredients.

Then add the little drops of heaven (aka sprinkles).

Glorious, glorious sprinkles.

Pour into your cupcakes tins and pop in the oven for 20 minutes!

Oh yeah and don’t forget to spill on the cupcake tin, very important step.

Bake, Bake, Bake

While your ‘cakes are bakin’ go ahead and make an ungodly amount of icing as well.

*Icing consists of an ungodly amount of butter, torturous amount of powdered sugar, splash of vanilla extract & small amount of milk*


Sadly, they are all gone. Within 12 hours of being out of the oven. This is why I only make treats for guests.
