Another productive Sunday for the books. It’s funny, because before I graduated college I would basically use the weekends to do absolutely nothing (besides be a typical college student 😉 ) and then freak out Sunday evenings about all I had to get done. Now, I use my weekends to catch up on organizing and cooking so the weekdays are easier. Oh, how times have changed.

This morning we headed to church and then immediately came home to accomplish our separate tasks. Ryan’s: Run 8 miles. Brittney’s: Cook & clean.

I’m really liking Sundays to prepare several meals to eat throughout the week. Today I made pulled pork in the crockpot (easy recipe that I will share later!), homemade macaroni & cheese, Cowboy Potato Chowder & homemade peanut butter.

Probably the best mac and cheese I have ever made. Definitely one you’ll want to bookmark once I post!

Mmmm. Another great Sunday dinner.

I doubt this will happen every Sunday. Actually, I know it won’t because the next two Sundays we are out of town but some of these meals I’m freezing since I know we will feel lazy after travelling. No preparation = failure!

Other to dos of today was to catch up on my IIN work and wedding stuff. I failed at doing anything wedding related. I’m in a rut and I just can’t motivate myself to do anything with it! Four months to go…

Yes. I signed up for a race. A running race. Granted, it’s just the 5K, but…I can barely run for 5 minutes let alone a 5K! They say signing up for a race serves as motivation. Here’s to hoping!

I plan on doing the Couch to 5K program as my training plan. It feels slightly ridiculous to have a training plan for running 3 miles, but you gotta start somewhere. The plan is running 3 days a week, so my goal is to run once on the treadmill and twice outside to get my legs used to running. Don’t worry, I’m not giving up my beloved Body Pump though! I still plan on going to all the usual classes I go to and just squeezing in the running somewhere in between.

I convinced Ryan to run it with me so I’m not dying running it by myself. He will at least serve as motivation for me to keep going.

So that’s my Sunday. Off to finish the weekend relaxing!

So, this title makes it seem like there were multiple bloggers at this meet up. However, it was just Alysha & me (and our significant others, of course).

After interviewing me for an article Alysha was doing, we decided we had to meet in person. Yay local bloggers!

I raved about El Beso to Alysha and since they had only had drinks and appetizers there I had to introduce her to the chorizo. Oh my goodness, the chorizo. So GOOD! Unfortunately, we were all talking so much that I forgot to take a picture. Trust me, it was delicious 🙂

This morning I took a yoga class again at the same place I did last weekend. I like starting out Saturday with a yoga class. It starts the weekend off on a peaceful note. For whatever reason, today’s class seemed to flow more quickly than the previous. Maybe because we all weren’t newbies? Not sure, but I do know I worked up a sweat!

I decided to stay for the Mat Pilates class after as well. If you can remember back to my first Pilates class, it was not similar at all. We used a weighted bar (ouchie) and a piece called the “Magical Circle (pictured below)”

We did not do this move, but kept it in between our heels for the majority of the class.

Though it wasn’t as challenging as the previous pilates class, it was still a good workout.

It’s another gloomy day here so I’ve been snuggled up inside catching up on IIN work and cleaning the house. Ryan is being my hero by going to the grocery store for me, so I better make something extra special for dinner!

Ryan is pretty much obsessed with this recipe. You see, when we first started dating, he told me how he makes a really good chili. He was committed to being the maker of all chili in our house and I never complained. I enjoy his version of chili. But when I saw this Sweet Potato Chili on Andi’s blog, I knew we had to make it.

Our love of sweet potatoes is somewhat disturbing. We could eat sweet potato fries (or anything sweet potato for that matter) several times a week and not get bored so that’s how I knew this recipe would be a winner.

Our intention was to have a chili cook off and taste them side by side, but that never happened. After making this the first time, this is the only chili we’ve made since….I’d say I won 🙂

The best part of this recipe? It’s a set it & forget it kind! Aka, using your crockpot. I know you all love your crockpots. And if you don’t, then you are truly missing out. And kind of weird.

The second best part? Easily adaptable to be vegetarian/vegan! A winner for all indeed.

Sweet Potato Chili

Recipe via Can You Stay For Dinner

Ingredients:

  • 28 ounce can crushed tomatoes
  • 14 ounce can diced tomatoes
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons smoked paprika
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 2 large sweet potatoes, peeled and chopped into 1” pieces
  • 1 medium onion, coarsely chopped
  • 2 cloves garlic, minced
  • 15 ounce can kidney beans
  • 15 ounce can black beans
  • 1 lb italian sausage (optional)

Directions: Combine all ingredients into your slow cooker for 8-10 hours on low setting. Top with shredded cheese, greek yogurt or avocado. Or any other toppings you desire!

Evening!

Another dreary day here. What happened to the 70 degree weather we had in the beginning of  March?!

I ended up staying later at work than usual and then realized I wouldn’t have time to go to the gym before Ryan’s softball game. Turns out, Ryan’s softball got cancelled so I kind of skipped the gym for no reason. Oh well. I’ll be back at it tomorrow!

Speaking of, I took my second Body Combat class yesterday. My first class was almost a month ago at the launch release! That class. So killer! I don’t think my heart has ever beaten that fast for such a long period of time. I love it and it goes by so quickly too! Definitely keeping this class in the rotation.

Dinner tonight was a play on the old classic spaghetti. We have had lentils in the cupboard and I decided to throw some in the mix of spaghetti sauce & italian sausage to make it a bit healthier and to give more of a protein punch.

Served alongside some kale chips and garlic bread.

I bought a different type of kale this time, dinosaur kale to be exact. Not sure if it’s the kind of kale or if I just baked this batch too long but I was not a fan. It was okay, but I’ve made better!

I can’t believe it’s already Wednesday. Love how fast this week is going! We have big plans of meeting Alysha over at She’s On The Run at El Beso Friday night! It’s been too long, El Beso…too long.

Night!

Yep. An entire chicken. Roasted. In your own oven! And it barely takes any effort, I promise!

First, you start out with, well…a whole chicken.

Aside from being easy to make,  buying a whole chicken, compared to buying individual breasts, is much cheaper as well! This chicken was originally $8.48 but was on sale for $4.65! We’re still eating thru it, so I’ll let you know how many meals this lasts us.

Back to preparing the chicken. Be careful while taking the chicken out of the package…juices will be flowing. I opened mine over the sink just to be safe.

Also, check to make sure there isn’t a package of the giblets inside the chicken. It should be in a plastic bag and will not look appetizing, however some people cook those up separately. I didn’t because mine mysteriously didn’t have any…and I swear I didn’t cook it in the chicken!

Now that you got it out of the package, pat down with a paper towel. This step is necessary, so don’t skimp!

Next up, you season the chicken with salt & pepper. Make sure to season the inside too! And don’t hold back. I used probably a teaspoon to a teaspoon and a half of each.

After it’s alllll seasoned up, rub it down with olive oil.

We’re running low, as you can see.

Next, cut up half a lemon and throw that sucker in the chicken.

Pop that baby in the oven for 90-100 minutes at 450. You’ll hear it sizzling almost the entire time, but be patient! It’s worth the wait.

Um, look at this.

Yes, I didn’t use a roaster because…I don’t own one. Not yet at least! After September 2 though, I will 🙂

Perfectly, crispy skin. Juicy, succulent meat. Definitely great for a Sunday night dinner, or any dinner for that matter! Plus, you’ll have plenty of leftovers. And you’re even able to make homemade chicken stock with the leftover bone! Not bad for $4.65, eh?

Question: Have you ever roasted a chicken (or turkey) before?

Though the title of this blog may paint the picture that my workout was also easy, it indeed was not! I attended my usual Body Pump class after missing the past couple Mondays. After Saturday’s class, I was a bit nervous but it was great! I definitely felt stronger, but boy was it difficult! I think it had to do with the instructor. My favorite instructor taught (she usually does Wednesdays) and she really pushes us to the limit which I love (and also hate! 🙂 )

What was easy tonight however, is dinner! My meal makin’ Sunday had dinner ready for us in a jif.

Sweet potato chili! It’s a favorite in our house. I used Andi’s recipe to a T, as always. Ryan is obsessed  with this recipe (as am I) and we usually eat it up in a matter of days.

A sweet and savory combo I can get behind!

In other news, I’m finally giving this blog a makeover! Julie from Savvy Eats is helping me with a complete re-design and I am so excited. We just finalized on a header image today and I can’t wait to show everyone! Not sure when it will be all changed over, but hopefully soon. I’ll keep you posted in case you read via Google Reader 🙂

Tonight we had what I would call a “Sunday dinner.”

What you see here is roasted chicken (that I roasted myself!!!), mashed potato/cauliflower and steamed broccoli.

I’ll be posting how I roasted the chicken and the mashed potato recipe some point this week. Both are definitely winners!

I was cooking up a storm today. I think it’s because I haven’t truly cooked in about 3 weeks. With getting sick multiple times, cooking just did not happen. Today I roasted a chicken (and obviously made this meal), made sweet potato chili in the crockpot, made homemade sweet potato gnocchi and homemade biscuits and gravy this morning for breakfast.

After all of that, I somehow managed to vacuum the entire first floor of our house, do a load of laundry, do most of my IIN work and have my 4th health coaching session with my mentor.

Whew, I am worn out by typing that out! All in all, a great, productive Sunday.

Off to watch more Gossip Girl and plan my workouts for next week!
